Bananas Foster Pancakes

Banana Foster Pancakes

I’m not even sure when I started making banana foster pancakes for my kids, but it has definitely become one of our camping standards. I’ve tried multiple times to make them in our sticks and bricks, but they never quite come out as good. Our family expects them, even if we just spend one night in The Tin Can. Try this recipe for yourself to see what all the fuss is about!

Ingredients

2 cups of your favorite pancake mix – I prefer the Walmart Great Value Extra Fluffy pancake mix. It’s quick, easy & good. You just mix it with water.

½ cup butter

¼ cup packed brown sugar

½ tsp ground cinnamon

¼ tsp ground nutmeg

½ cup maple syrup

¼ to ½ tsp rum extract (or 1 tsp of rum), if desired

4 firm medium bananas, cut into ½-inch slices

½ cup chopped pecans, if desired

Directions

1 In a medium bowl, prepare your chosen pancake batter. Heat griddle or skillet over medium heat or to 375°F. Grease griddle with vegetable oil if necessary (or spray with cooking spray before heating). For each pancake, use slightly less than 1/4 cup batter. Cook until bubbles break on surface. Turn; cook until golden. Serve immediately.

2 In a 10-inch nonstick skillet, mix butter, brown sugar, cinnamon, nutmeg, maple syrup and rum extract. Cook mixture over medium-high heat 2 to 3 minutes, stirring constantly with wooden spoon until sugar dissolves and the mixture is thick.

3 Reduce heat to medium; add bananas, gently spooning sauce over each piece. Cook about 3 minutes or until bananas are glossy and coated with sauce.

4 To serve, place 2 pancakes on each individual plate; spoon about 1/3 cup bananas and sauce over pancakes. Garnish with chopped nuts, and serve immediately

Angelica’s tips for the best pancakes

  • Do not over mix. Only mix until the dry and wet ingredients are completely mixed. Over mixing will cause your pancakes to be tough and rubbery.
  • Let your batter rest. It doesn’t need long, but 2-3 minutes will really make a difference in the consistency of your pancakes.
  • Be sure your griddle or frying pan is good and hot before you add your first scoop of batter to it. I LOVE my electric griddle! The temperature control that it gives me cannot be duplicated.

 

  • Make sure your pancakes are bubbly before you flip them
  • Golden brown
  • Slice the bananas 1/2 inch thick
  • Syrup mixture
  • Add bananas
  • Cook bananas until glossy
  • A plate of pure heaven
